Course details
Following schedule is a model schedule. It can be flexible according to when you arrive.
10:00 Arrive at Wachigai Restaurant (It takes 10 mins walk from Shinano Omachi station)
10:00~10:30 Orientation
10:30~12:00 Cooking
12:00 Lunch
*After the workshop, you can stay at the restaurant as you like
Wachigai Restaurant
The class is held at the over 130 years old house.
It was built in Machiya style and was used to be a house of Shoya, the biggest merchant in the city at that time. You can have a look around the unique inside.
We will show you traditional life style such as Koto, a Japanese harp and an old sawing machine, which have been carefully stored for a long time in Kura, an old style storage in back of the house.
Cooking class
The kitchen is made of Sake barrel lids came from a local brewery.
It’s located on the second floor, you will see the beautiful Japanese garden.
Experience with a couple, a family, or friends
We provide aprons, so you don’t need to bring anything.
We will give you a recipe that you can cook at your country.
The class consists of some basics of Japanese cooking, such as how to make Dashi broth, and introduction of local made ingredients, which are not normally seen at regular supermarkets.
We will explain for you to cook at home when you go back.
Local food course
Shinano Omachi is located at the bottom of Northern Japanese Alps and in cold climate, Also the city was historically a stop over point of the Salt Road which connects between the Sea of Japan and the middle of Nagano prefecture. The environment and the location made the unique food culture, and it has been inherited among people living in this city.
Through the ingredients and the way to cook, which you can learn only here, you will discover not only the unique food culture, but also sustainable and healthy Japanese diets.
Temari sushi course
The course is used local ingredients such as Shinshu salmon, Yukishita carrot, which firmed under snow, andShinshu miso. As it’s a different from regular Sushi, you will experience unique “Nagano Sushi”, which does not need to use raw fish.
Lunch time
After the class, you will have the lunch which you just cook. You can taste the comparing sake set (optional) with tasting guides by a person with International Sake Sommelier.
It will be free time after the lunch.
